Sweet Potato Lasagna



Sweet Potato Lasagna is a tasty variation on regular lasagna. Instead of pasta, it has layers of thinly sliced sweet potatoes. A hearty and filling meal that's great for a cozy evening.

Ingredients:

  • 2 sweet potatoes, peeled and thinly sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can 15 oz crushed tomatoes
  • 1 can 6 oz tomato paste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Preheat your oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add chopped onions and garlic, saut until onions are translucent

Add ground beef and cook until browned

Drain excess fat

Stir in crushed tomatoes, tomato paste, dried oregano, salt, and pepper

Simmer for 10 minutes

In a separate bowl, combine ricotta cheese, mozzarella cheese, and Parmesan cheese

In a greased baking dish, layer sweet potato slices, meat sauce, and cheese mixture

Repeat the layers

Bake in the preheated oven for 30-35 minutes, or until the sweet potatoes are tender and the top is golden brown

Let it cool for a few minutes before serving
