Ingredients:
- 1 box of store-bought biscotti mix
- 1/2 cup dried cranberries
- 1/2 cup shelled pistachios
- 2 large eggs
- 1 tbsp vegetable oil
Instructions:
Preheat your oven to the temperature specified on the biscotti mix box
In a large mixing bowl, combine biscotti mix, dried cranberries, and shelled pistachios
In a separate bowl, whisk together eggs and vegetable oil
Add the egg mixture to the dry ingredients and mix until well combined
Form the dough into a long, flat log on a parchment-lined baking sheet
Bake in the preheated oven for the time specified on the biscotti mix box, or until the edges are golden brown
Remove from the oven and let it cool for a few minutes
Using a sharp knife, slice the log diagonally into biscotti-sized pieces
Place the sliced biscotti back on the baking sheet and bake for an additional 5-7 minutes on each side, or until crisp and lightly toasted
Let the biscotti cool completely before storing in an airtight container
