The vegan shortbread tastes great and has a buttery, chocolatey texture.
Ingredients:
- 1 cup vegan butter
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup vegan chocolate chips
Instructions:
Preheat oven to 350F 175C
In a mixing bowl, cream together vegan butter and powdered sugar until smooth
Gradually add flour to the mixture and combine until a dough forms
Fold in vegan chocolate chips
Press the dough into an 8-inch square baking dish lined with parchment paper
Using a knife, score the dough into desired shapes such as squares or triangles
Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden
Allow the shortbread to cool completely before cutting into pieces along the scored lines
