Balsamic Vinaigrette Potato Salad



A delightful potato salad featuring a tangy balsamic vinaigrette dressing that adds a burst of flavor to every bite. Perfect for picnics, BBQs, or as a side dish for any meal.

Ingredients:

  • 4 cups red potatoes, cubed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

Boil the cubed red potatoes in a pot of salted water for about 10-12 minutes or until they are tender but still firm

Drain and let them cool slightly

In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper to make the vinaigrette

Place the cooked red potatoes, chopped red onion, and fresh parsley in a large salad bowl

Pour the balsamic vinaigrette over the potato mixture and toss gently to coat all the ingredients

Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together

Serve chilled, garnished with extra parsley if desired
