Ingredients:
- 4 cups red potatoes, cubed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Boil the cubed red potatoes in a pot of salted water for about 10-12 minutes or until they are tender but still firm
Drain and let them cool slightly
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper to make the vinaigrette
Place the cooked red potatoes, chopped red onion, and fresh parsley in a large salad bowl
